How much do you love shortbread?
If you love almonds, and you love shortbread, this recipe is for you! These flaky, delicious bites will have you and your guests coming back for more! I served these last night for an Astros watch party and they were a hit! Here’s how I made them:
Ingredients:
3/4 lbs (3 sticks) unsalted butter at room temperature
1 cup granulated sugar
1 tsp pure almond extract
3 1/2 cups all-purpose flour
1/4 tsp kosher salt
Directions:
Preheat oven to 350 degrees F.
In the bowl of an electric mixer, combine butter and sugar until just combined. Add the almond extract and mix. In a separate medium-sized bowl, sift together the flour and salt and whisk to combine.
With the mixer on low, slowly add the dry ingredients to the wet until the dough just starts to come together. Turn out onto a floured board and shape into a flat disk. Cover with plastic wrap and refrigerate for 30 minutes.
Line two baking sheets with parchment paper. After 30 minutes, remove the dough from the fridge and tear off ~2 tbsp of dough at a time. Shape into a ball with clean hands and flatten slightly. Remember, there is no leavening agent in this dough so the cookies will not rise by much. Place the cookies (12-16) on the baking sheet and bake for 12 minutes until they are slightly brown and tender to the touch. Remove from the oven and let the cookies cool for 10 minutes on the pan, then transfer to wire racks to cool completely.
