Hey folks! Sorry it’s been a while since we posted. We had a family reunion to travel for, and I’ve been feeling under the weather lately, so we haven’t spent much time in the kitchen.
It’s a gloomy day here in South Texas, and I’m still home feeling under the weather. What could help more than homemade chicken soup? I think nothing! I thawed some homemade chicken stock and leftover roast chicken (I try to always have some in the freezer), and combined it with onions, carrots, thyme, dill, parsley, garlic and noodles for a warming bowl of hearty goodness! The hot soup is perfect for sore throats and upset tummies, and served with some homemade dinner rolls and butter, I swear this meal could cure anything! By letting it simmer for a good hour and a half to two hours, the flavors really develop and make a rich and tasty broth. I pre-cook the noodles to al dente so they don’t absorb too much broth, but you certainly don’t have to if you want to save a pot!
