When your trying to lighten up, salads are a way of life. But, when your sick of the boring spinach or kale salad with balsamic vinegar instead of dressing, this Greek Salad is a life changer! Bursting with flavor, this salad is healthy and delicious. Make it a day ahead so the flavors marinate together and it’s perfect as a side dish (as we had it in the video with our Chicken Souvlaki), or as a light lunch! You’ll be making this over and over – we promise! Bon Appetit!

Ingredients

1 English cucumber, diced

1 red pepper, diced

1 green pepper, diced

1 cup baby tomatoes, halved

4 oz low fat feta cheese, small diced

1/2 red onion, small diced

1/3 cup good olive oil

3 tbsp red wine vinegar

2 tsp dried oregano

1 clove garlic, minced

1/2 tsp good Dijon mustard

Salt & Pepper

Directions

Toss all the vegetables in a large bowl until combined. Gently stir in the feta cheese making sure not to break it up. Set aside. In a large glass measuring cup, combine the oil, vinegar, garlic, oregano, Dijon mustard and 1 tsp of salt & 1/2 tsp of pepper. Whisk until the dressing is combined and emulsified. Add the dressing to the salad and toss to coat all the vegetables and cheese. Cover and refrigerate 2 hours to overnight. Enjoy!
